What do you consider the best of the best of British?
What a question. It has to be everyone’s Sundays favourite, roast dinner.

What's the best/worst thing about the British restaurant scene?
The best thing is excellent service
The worst thing is terrible service.
You can have the best food in the world and if it’s served by an un-interested, rude unhelpful waiter/waitress it can turn the whole evening sour.

What do you think will be the next big thing?
Simplicity is key, that is what is successful now and will be for a very long time. Lose the waiter in a dickie bow serving ridiculously small portions of food and showing you the ‘water menu’ its DEAD!

What would you do if you could choose any other career?
I’d work in Gerry’s Soho!

What do you have for Christmas lunch?
This year, it will be a mystery, I’ll be in the Costa Rican jungle with 9 strangers.

Make a wish
Ok
