BUTTER CHICKEN SAUCE
 A rich, mild butter sauce finished with spices, lemon and cream. Gordon’s inspiration was a
dish he helped to cook at the famous Moti Mahal restaurant in Mumbai.  Turmeric, garam
masala, coriander, clove, paprika and cumin provide authentic depth.
Delicious with: slow-cooked beef, grilled chicken or seafood.
SPICED RICE SALAD


Prep time: 15 minutes
Cooking time: 15 minutes, plus 10 minutes resting


Serves 8-10, as a light lunch


3 x 250g packets steamed basmati rice
¼ jar Seriously Good Butter Chicken sauce
200g Greek yoghurt
zest and juice of 1 lime
200g vine cherry or baby plum tomatoes, halved
150 sugar snap peas, cut into thin strips
100g button mushrooms, thinly sliced
10g mint, chopped
10g parsley, chopped


1. Prepare the rice according to pack instructions. Allow to cool.
2. Mix the Seriously Good Butter Chicken sauce with the yoghurt and lime juice and zest. Add the remaining
ingredients and stir well before spooning onto a serving dish. Serve with the rice.


BUTTER CHICKEN SKEWERS


Prep time: 20 minutes plus marinating
Cook time: 20 minutes
Serves 2-3


INGREDIENTS :


1 x 350g jar Seriously Good Butter Chicken sauce
400g  boneless chicken thighs cut into 3-4 cm chunks
1 garlic clove, crushed
2cm ginger,peeled and finely grated
Sea salt and freshly ground pepper
1/4 tsp hot chilli powder
50 ml natural yoghurt
1/4 tsp garam masala
1/4 tsp ground turmeric
1/2 tsp ground cumin
1 tbsp vegetable oil for brushing


1. Soak 6 short(15cm)  wooden skewers in water for 20 minutes.  Meanwhile, marinate the chicken in
a bowl with the garlic, ginger, salt, and chilli powder. Cover with cling film and chill for at least 30
minutes.

Combine the yoghurt, garam masala, turmeric and cumin with the chicken. Mix well to coat. Thread
chicken pieces onto skewers and place skewers on a baking tray. Cover again and place in the fridge
for another 3-4 hours or overnight.

Preheat the oven to 180°C /fan 160°C /Gas 4. and bake for another 10 minutes , turning halfway
through until just cooked through.

Pour the Seriously Good Butter Chicken sauce into a large frying  pan, bring to a simmer and then add
the cooked chicken skewers. Simmer for 5-8 minutes, spooning over the sauce to coat.

Serve the skewers with extra sauce with fresh chopped coriander and a good helping of basmati rice.
